Muffin Heaven

Overripe bananas. They’re OVERLY sweet, mushy, and splotchy. An awful mess that makes muffin heaven. Let me tell you, I visited and I’ll be going back often. I decided to make the recipe COMPLETELY from scratch (yes, potentially hazardous). Anticipating the massive FLOP, I went for it (all the meanwhile telling myself, no one needs to know I wasted rotten ‘nanas).

Flabbergasted, the outcome blew my drawers off. Immediately picture texts were sent to family demanding they HAD to taste them. And friendlies, that goes for you too (not an option here). Unless you want to be obstinant and foolish. And in that case, you’ll get more than a rotten banana comin’ your way. You’ll witness prego wrath…

Not a pretty thing.

What is? The roasted buttery almonds covering the slightly crisp muffie top. Oh and the steamy crumbly fall apart middle? Like I said, muffin heaven.

      The almond is so subtle its hard to even pinpoint it unless you’re the baker behind them. Husby kept saying, the flavor is really special.

    Ooh yum these look so good! I could easily sub in some coconut sugar for the sugar and then I wouldn’t even have a reaction to eating them – yay! I love the sound of the almond with the bananas…yum!

      Mmm, sounds like a good substitution. YOu’ll have to let me know if they turn out the same in texture!

    wow…these look amazing! Thanks for sharing the recipe…I’m with Amy. Almond extract is so incredible in muffin recipes. Strawberry muffins with almond extract are delicious too. I’ll have to give these banana heaven muffins a try soon!!

      I’ve never tried almond in strawberry baked goods. Might have to give that a go next time.
