Lemon Shrimp Fettuccine

Most summer nights I’m not in the mood to cook. The heat, I tell ya. It really gets a girl’s better domestic half. So much so that I find myself gravitating to cold salads, quick sandwiches, and grilled meats with seasonal veggies.

Being totally frank, if I had it my way we’d eat popsicles round the clock. Here ya go, munchkin… a pea popsicle. Dig in.

So when it comes to pasta? Yeah, no. Not exactly my vision of summer. That is, unless it involves citrus, fresh herbs, and jumbo shrimp. And what’s not to love when it can be on the table in 15 minutes? Yeah. It’s kind of mind-blowing on so many levels.

    Must make! This sounds delicious. I may reduce the amount of oil and butter though. Need to get back into shape.

    Hi! This looks delish! Just wondering where you buy your wild frozen shrimp? I can only seem to find frozen farm-raised shrimp at my store.

    This looks delicious! I will use brown rice pasta instead of egg noodles due to allergies. I can’t wait to try this out. Perfect for summer!
