GF Pancakes – Apple Compote

Sundays are always welcomed with smiling sunrises! It’s the only day of the week that can be enjoyed as a family {all day} with no other interruptions. First on the agenda, pancakes. Gluten free pancakes. With nummy warm apple compote. {no need for syrup baybee}. i must say they’re eye-rolling good.

    I hate syrup. my girls and I usually put berries and whip cream on our pancakes, but I’d love to try this. Unfortunately we all just finished ours, maybe next weekend. And I’m so jealous of your family Sundays, mine are “Single Mom Sundays”. Not quite the same. 🙂

    Stone ground some wheat, made 100% whole wheat waffles, topped it with this gooey apple business – in the words of Morgan, my two year old, “mmm… licious!!”

    Do you have a way to make apple compote without sugar? Natural sweeteners are fine in small quantities (honey, agave etc). I just can’t tolerate brown or white sugar too well and especially not in the morning – huge energy crash later :(! I have tried to make apple compote without the sweetener (I find apples sweet enough!) but it doesn’t get that gooey-ness to it :(.
