Some weeks the calendar is wide open; and others, well… you know… picture Old Faithful (duck and cover everyone, we’re about to explode) kind of busy. A few weeks back was one such week for us: preparing to leave town for a few days, multiple activities for the kids, scheduled appointments, dirty hair, dirty clothes, everyone was sick… I could go on but really, these things aren’t exciting. And I’m here to entertain, am I not? Wink. Ironically, the timing was perfect for Blue Apron to show up on our doorstep. They’ve been a long-time partner of ours and we’ve come to rely on them occasionally, in times of need. They deliver farm-fresh meals (check out their mission page), already portioned, packed in a neatly refrigerated box (and labeled for added simplicity), with easy to follow step-by-step instructions for execution. It’s fun to go online and choose from recipes I wouldn’t normally prepare. I would have never thought to create a vegetable hash throne (if you will haha) for perfectly pan-seared pork chops! Incredibly delicious and it was ready from box to table in under 40 minutes! I’ll take that over a drive-thru run any day of the week. I love that about Blue Apron — I can still do my Mom thing by making a healthy meal for my family; while getting the added help of not having to go to the store or create a recipe on the fly. And for us, that means dinner can still be that treasured time to slow-down together, that we so enjoy.

    WE love Blue Apron too! Haven’t had a meal from them yet that our family didn’t like. Do you mind if I ask where your plates are from? I’m in the process of switching over to all white dishes 🙂
