Valentine Meringue Tarts

I think about you all the time; but I dream about my one true lemon love more. Don’t use that in a card when you give these to your sweetheart. Ha! But really though, I’ve found a new love in the form of delightfully light heart meringues (they remind me of a mix between cotton candy and marshmallow, if such a thing exists). They’re gluten-free, low in calories and are cutie!! However don’t be fooled, these little love boats main purpose is carrying a hefty indulgence of eye-rolling lemon curd whipped cream and sweet fresh berries to the dock of your mouth! I mean, I’ve tasted yummy before; but this doctored-up whipped cream turned out to be one of the tastiest surprises I’ve ever encountered! If that’s not convincing enough, ditch the meringues and make the cream for dunking strawberries in while watching a cheesy netflix come February 14th. Worth it.
