Memorial Day weekend can only mean one thing — summer is finally here! Too bad it’s rainy and cold where we live (wuhh-wuhh). But for all those who are enjoying sun and outdoor festivities, this simple salad can easily be adapted by changing the herbs and produce you have on hand. It’s my quick go-to for lunch, when packing a picnic, or the perfect addition to your upcoming holiday BBQ! Enjoy!

    It is cold today as well up here in Quebec, Canada, we’re anxious for consistent warm weather, but until then it’s coffee in the sun on the patio ( with a sweater )summer salads( I’m definitely trying this one) and rosé in the afternoon…making the best of it 🙂

    Yay so glad to see you posted this recipe! I’ve been wanting to try quinoa at home and this seems like such a simple and delicious take on it. Especially since I’d probably eat just about anything with avocado on top. Thank you!
