Spinach Pesto Pork Chops

Most weeks call for less-than-special meals. But every now and again, I like to surprise Husby with a mid-week meal that looks impressive, tastes like an upscale restaurant, but doesn’t ask me to be cooped up in the kitchen all afternoon. And yes, even the newbie cook can handle this one!

Bust out a tablecloth, fresh flowers, and candles… and I promise, your family will be wowed and so will you for pulling something like this off on a Thursday!

    Pork is such a great protein to combine with different stuffing! I’ll have to try the pesto, it looks amazing.

    Also, try stuffing with cranberry/apricot/almond compote 🙂
