Roasted Red Pepper Soup Recipe

The most conducive way to eat — everything mixed into one pot, quick and easy, warms the belly, and feels oh so cozy! At our house, soup earns its place on the menu at least once a week. This one came about in efforts to recreate Trader Joe’s Roasted Red Pepper Soup which used to be our favorite side to grilled sandwiches! Roasting the vegetables makes for a rich robust base. The cream element (believe it or not, is plain yogurt) gives a tart element to balance out the flavors. We might even say it’s our new signature soup, with your name on it!

    Looks oh so yummy!!!! Soup is on our menu at least once a week. If you haven’t tried it yet, you should make Giada’s Winter Minestrone. It is uh-mazing and so filling and full of great vegetables.The best part is that it freezes great and almost tastes even better after frozen!
