Pumpkin Pie Sugar Cookie Recipe

You might call it the ultimate Thanksgiving oxymoron — a double layered sugar cookie that looks and tastes like traditional pumpkin pie. Not to confuse things even further, but throw a scone baking pan into the equation! Ha! They’re soft, buttery, and topped with the most delectable cinnamon cream cheese frosting (that I may or may not be using for my toast, fruit, and everything else I can find to smother it on). Gobble gobble!

    These are adorable! I have to admit, I’m not a huge pumpkin pie fan, but they seem like they could be tweaked to be any sort of other flavor. I wonder if I could do an apple pie cookie?

      Absolutely! I’d swap out the pumpkin purée for apple sauce, add some fresh lemon zest (2 T), and replace the pumpkin pie spice for cinnamon, and eliminate the milk. You might try adding diced apples as well. Just be cautious of the dough consistency. If it looks wet, you’ll want to add additional flour. Good luck!

      I’m not sure how it would work without one; unless you used a regular pie pan and then scored the cookies while still warm? Maybe worth a try?
