Mom’s favorite Easter treat are Peeps, hands down. Without fail, they’d peep pop up in our Easter baskets EVERY year. The truth? I’d pawn mine off to my sister to keep from gagging. I’m still not a fan… of the store-bought kind, that is. You see, I started making marshmallows a few years back for Christmas cocoa. I was pleasantly surprised at how COMPLETELY different the outcome was. So why not take the same delicious recipe and transform them into Peeps for Easter? Kinda cute, right?

1 – Cut out chicks and bunnies using cookie cutters and place on parchment lined baking sheet

2 – Lightly brush marshmallow with water (or dunk in a cup of water and let excess water drip off). Roll liberally in colored sanding sugar. Return back to baking sheet to dry.

3 – Using a toothpick, dip the tip in melted chocolate and dot for the eye (cocoa powder mixed with water will also work).

4 – Let peeps rest. Dust off any excess sugar before eating or packaging in chocolate nests (bowls).

    I am not a fan of store bought Peeps. My husband on the other hand LOVES them – yuck! I will have to give these a try. They look super yummy!

    Making your own marshmallow really rates highly in my book as an impressive undertaking in your final months of pregnancy!! or anytime really. These are gorgeous and you make it look so easy. I fear I’d end with with a sticky sugary mess everywhere but I might try these. ♥

    These look fun! I’m not a huge fan of peeps either, but I’ll take your word for it and try these out! At least they will be fun to make and watch others eat.

    Looks good! We have a corn allergy here, any chance of subbing the corn syrup out?

      Try rice syrup! You can buy it at a health food store. I have not tried to use it in this recipe, yet, but in other recipes I have swapped rice syrup for corn syrup. I too have an allergy to anything derived from corn.

      There are several marshmallow recipes that don’t use corn syrup. Very similar to this one, just w/o corn syrup. Do a pintrest/google search. We have corn allergies too, so when making regular marshmallows I use homemade powdered sugar or organic powdered sugar (made with tapioca starch).

    Have you tried these with only 2 envelopes of gelatin? I used the three and they were yummy, but I thought they were a bit off in texture. Could have overbeaten them a bit though too. Was curious if two envelopes gelatin would work or if they would be too soft.

    For those of us who buy gelatine in boxes rather than individual packets (in NZ), could you tell us how many tablespoons of gelatine that is please?

      The packets are 7.2 grams or 1 Tablespoon.

    My good friend buys me lots of peeps every year. That is all I ever ask for. So saw that she sent me a message on the how to make them was awesome. Must try to make. Not sure if the altitude of 6,300ft and humidity makes a difference but I will try.
