So when my sister-in-law called feeling ho-hum about meal planning; I remembered one of my favorite tips: keep a salad on hand.
Usually that means making it ahead of time. For me, that happens on Sunday (when I have two extra hands to entertain the boys… thanks, Babe). It’s an instant go to for lunch or as an addition to dinner. Each week we change up the salad; but it’s always fresh and healthy. This one is extra light using olive oil, lemon juice, and salt n’ pepper. Talk about easy-peasy lemon-squeezy!
