Lemon Dill Pasta Salad

June 19, 2013

We all get in our usual “ruts” of preparing the same meals over and over. I hear you. It can be mundane and boring. Slightly robotic, if you will. Beep. Beep. I. Make. Food. For. Life.

So when my sister-in-law called feeling ho-hum about meal planning; I remembered one of my favorite tips: keep a salad on hand.

Usually that means making it ahead of time. For me, that happens on Sunday (when I have two extra hands to entertain the boys… thanks, Babe).  It’s an instant go to for lunch or as an addition to dinner. Each week we change up the salad; but it’s always fresh and healthy. This one is extra light using olive oil, lemon juice, and salt n’ pepper. Talk about easy-peasy lemon-squeezy!

  • Reply Ashley June 19, 2013 at 1:04 pm omg too funny!!! I totally agree that making the same meals over and over gets really boring. I try to make different meals but if I’m too busy then I always resort to the same meals as I can make them pretty quick! Total robot right? Haha

This looks really good I think I will write this recipe Down! Thanks girl 🙂

    Sincerely Miss Ash

Question, how do you keep your green salads fresh and fresh tasting when you make them in advance? Mine always seem to go bad so fast!
