Chocolate & Pumpkin Ice-Cream Sandwich Recipe

 

My biggest ‘I NEED a treat’ moments seem to happen as soon as I crawl into bed at night. Odd, I know. Although, I rarely make the splurge a reality — instead my mind races with delicious combinations of all sorts of goodies.

The idea was rich chewy cookies that tasted more like my favorite cake, than a traditional chocolate cookie — sandwiching my favorite pumpkin ice-cream (anyone else a fan of Trader Joe’s?).

Melted chocolate as the base with salty crunchy pecans made this late-night crave a good morning splurge.

Hello, spooktacular little treats!

  • *TIP: unlike other ice-cream sandwiches, these cookies need to be room temp and assembled right before serving. Storing the entire ice-cream sandwich in the freezer changes the texture of the cookies… no good, friends.

    Reminds me of the chocolate chip pumpkin muffins we used to make. Yum! Have to try it! And yes, Trader Joes is always a good idea!
