We’ve been teased with a few warm weeks in a row — almost made us forget it was winter. That is, until the snow reminded us otherwise. But, the perk of colder days? Cuddles, warm fires, slower days and longer stories; and of course, the making of soup. Doesn’t get much better than a good bowl of steamy comfort alongside some crusty fresh bread for ladling (spoon completely optional), if you ask me. This rendition of your classic minestrone is kicked up with the addition of five cheese tortelloni and peppery arugula greens. If it’s warm where you live, you can make a mental note to try it next year (chances are you’ll forget. it’s ok, I won’t hold you to it). But if by chance it’s still blustery cold; add it to your weekly menu. It won’t disappoint.

      Oopsie! Haha! Minor detail, right? Add remaining veggies before covering and simmering on low for 15 minutes. I’ll have to go back in and fix that.
