Sweetheart Sandwiches (Day 6)

February 8, 2013

If Husby had things his way, everyday would end with ice-cream (no matter the form). I have his Pop to thank for that one. Never seen a man cram so many scoops of ice-cream into a single bowl – takes some serious talent! (love you, Nonno).

Slapping some strawberry ice-cream between two soft chocolate cookies was just what Dr. Love ordered. Big enough to share, for sure. Or not if your goal is a sweetheart-heart-attack. Babe, we really need to have some sort of ice-cream intervention, here. xo

We don’t eat a lot of ice cream around here but my husband and I are preparing a special Valentine’s day dinner for ourselves and this would be perfect for dessert. Plus I’m obsessed with using my new KitchenAid mixer. Thanks for the cookie recipe!!

Hey there! Thanks for sharing this recipe. Decided to make these for my Hunny on Valentine’s Day (also pinned it on Pinterest ! )
    Two questions:
    Light or dark brown sugar?
The cocoa, unsweetened or dutch process?

    Thanks and Happy Monday!

Sorry for the confusion, Cassie. Light brown sugar and unsweetened cocoa. Happy Monday to you too! xo
