GFV Marinated Tomatoes

Sometimes fresh just sounds best. Normally that means a salad. But sometimes salads are just gagging. weird. but it just depends on the day. These marinated tomatoes are one of my favorite “fresh” staples. The many variations could include: bruschetta, on top of angel hair, as the base of your pizza, mixed into quinoa or cous cous, topping a sandwich/burger, or eaten plain with a spoon. Plus, it’s gluten free & vegan for all my xspesh friendlies out there! Tonight I used them to top my angel hair rice pasta. Nom num nom.
