Fishin’ Chips

April 6, 2011

I’m basically breaking LOTS of rules here. Obviously this lil’ number would be served in summer on the beach, in the sun, collecting seashells, watching gulls, waves, and men who shouldn’t be wearing skimpy suits. All while sippin’ lemonade. But no. It’s freezing tonight and soup sounds much better to me. So, I’m takin’ one fo’ the team. This’ll give Husby a huge smile when he walks in the door – so fish n’ chips it is! Heck. Maybe if I play my chips right {no pun intended} I can casually slash bluntly bring up the non-negotiable necessity for a beach vacation this summer. Genius, Cap’n.

I’m usually anti fried food, but why is that fish just tastes so darn good cooked in a little oil? Especially when you squeeze that lemon on top! So tasty! Also, for those out there that need “gluten-free” I love coating my fish in cornmeal (as I’m sure you’ve also been doing for the past 10 months 🙂 )

These lil’ fishies will definitely be worth the exception, friend. If you get fresh cod – the health benefits def out way the oil factor. Just sayin. haha

Try ’em! You’ll love it! And really it’s a 10-15 minute prep/cooking tops!

These look amazing!!! I too am not a fried person, but every once in awhile you gotta splurge! Giada de Laurentiis has an amazing fish stick recipe. She uses salmon and they are baked. Try them! 🙂

Oooh, Miss Giada! And I’m right with ya – baked over fried any day of the week. Link me up, lil’ Lady for the recipes!
