Carrot Cake Cuppies

Craving carrot cake is a frequent request of Husby’s. The downfall? The cake is seriously humungo-jumbo in size. It would end up going to waste if not shared with everyone on the street. Not this time. I decided to turn them into mini carrot cake cuppies. The leftovers are easily frozen (minus the icing) for a quick treat when the urge creeps in.

    hi, i hope i’m not being a big dummy, but i would love to print this recipe off without printing the entire page. i cannot copy and paste for some reason. is there a place on your blog where your recipes are printer friendly?

      All the recipes are saved as images. You can right click and save them and then print. Let me know if you’re still having issues and I can send it to you. Would it be helpful for me to also post them as a pdf? I can do that as well. 🙂

    thanks, i was able to right click on the text and save it, then print. i don’t know if a pdf would be different or easier. as you can probably tell, i am not that great with computers;)

    I made these last week for a coworker who had been begging for carrot cake. I finally relented after coming across your recipe via pinterest. They turned out WONDERFULLY! Thank you for the yummy recipe – it’s a keeper!

    Hi:) This will be my first time attempting to make these. My daughters first birthday is coming up and wanted to do some sort of alternative to a regular sugary cupcake. Thought this would be a great idea:) My question is….do i need to alter the recipe at all if I choose not to use any nuts?? Thank you:)

    I love the idea of treating these lovely, delicious cupcakes as little double layer cakes. It will satisfy my cream cheese frosting urge with frosting in the middle and on top. I usually always make extra frosting for my carrot cakes to add to each bite. I never thought to do that before and love the idea. I will definitely try your recipe.
