Capellini Pomodoro Recipe

Farmer’s market tomatoes are still ripe for the picking until temperatures drop. So until Mr. Frost decides to show his chilly face, we’re getting our last fix of fresh tomatoes in! You may have ordered it at Macaroni Grill or Olive Garden — refreshing Capellini Pomodoro! It’s one of my family’s favorite dishes I frequently make when tomatoes are in season. It just so happens to also be one of the simplest to make — a no-fuss meal; just throw it together in a big bowl (no exact measurements needed), remember past days spent in Italy (Florence to be exact), and let your tastebuds do a happy little jig! Buon appetito!
