Soup (as defined by husband): a disappointing way to hose you out of a meal. ha! That definition has since changed. In fact, he’s a big fan of liquid meals served in a bowl! Because if done correctly, soup is ridiculously delicious and down-right comforting. This recipe has been a long time coming and errs on the side of savory more than sweet. If you’ve tried butternut squash soup they aren’t all created equal. The difference? Roasting. It brings out rich intense flavors with robust undertones that salute fall. It’s perfect alone — served as an appetizer; or for a meal alongside ham and cheese (swiss + gruyere) toasts, with a sweet arugula salad tossed with candied pecans, sliced apples, pear, and pomegranates. Try it for Thanksgiving; your guests will be more than grateful you did!

    This sounds so yummy! We love your roasted red pepper soup too! I will definitely have to make this. I just bought that “better than bouillon” at Costco, definitely handy to have on hand 😉

    Cold and rainy day in Ohio so we are making this now….can’t wait to try it with some homemade bread and a little cheese platter! I had just enough squash after everyone kept sneaking the raw pieces as they passed through the kitchen. Thanks for sharing your recipe! ? ?
