If baking were as easy as blending, I’m pretty sure there’d be more muffins in this donut driven world. Not dissing donuts, in the slightest. You know we INHALE us some donuts on any given Saturday. Just saying there are healthy alternatives out there that satisfy and make you feel like a semi-responsible mother. Ha! With fall in full-swing, we’ve been keeping our freezer stocked with this lovelies. They’re the perfect addition to a quick breakfast for your commute to work, as a morning or afternoon snack, or even with a hot cup of tea before bed. Friends, the best part, (in my honest opinion) is the fact that they’re guilt-free. With peanut butter and bananas as the base, there’s no need for flour or oil (yes, you read the recipe correctly). The shredded coconut and hemp seeds are hidden gems that pack major nutritional value containing essential fatty acids and omegas that we all need. The crunchy banana chips add texture and curb appeal, and of course the chocolate adds a level of decadence. Pretty giddy about this recipe, you guys. It’s a keeper!
