Banana Bread

Each morning, they talk to their Dad during his commute to work. ‘Daddy, what did you have for breakfast?” He responded, “Just a bowl of cereal and a banana, Pal.” Referring to the collection of bananas residing in our fruit basket, Gage continued, “Was it a dirty one or a clean one?” — you see, we tend to always have both: the slightly green ones and the over-rippened ones with ‘dirty’ brown spots that clearly need a bath! Ha! Kids. Aren’t they the best? So is this banana bread.

    I love my mom’s banana bread recipe, but this one looks great, too. The yogurt has me intrigued! Also, I don’t see how much of the extracts to add in the recipe?

      Yes, the yogurt adds more moisture and the real kicker is the rum extract (play off of bananas foster). LMK what you think if you try it!

    Hi! I want to try this as soon as my bananas get “dirty” – I can’t wait! In reading the recipe you mention extracts but they aren’t listed in the recipe. Help?

    Ok, the rum extract….genius!!!! My favorite banana bread recipe is Tyler Florences and the key is literally whipping 2 of the bananas/sugar till it’s light and frothy and then folding in the mashed up 2 other bananas. It creates a super moist “not dense” bread. But you sold me on the rum extract and the yogurt. I have become a huge fan of baking w/ yogurt. Thanks Missy. 🙂

    My favorite banana bread recipe has sour cream in it. For obvious reasons, I rarely make it. Totally have to try this one with the yogurt. I think I will fat free greek yogurt and see how that works. And the rum extract….headed to the store tomorrow!
