Salads have never really been my thing. It might be due to the fact: growing up we had a green salad almost every night (not a bad thing, mom… I know you were trying to get us our greens). But it kind of left me crinkling my nose at salads well into my adult life. That is, until I started adding fruit and proteins and everything but the kitchen sink. This one originates as a doctor’d-up version of a poolside lunch I had a few days ago. Watermelon in salad? Genius! I took it a step further by adding at least six more ingredients; which kept me full until dinner! The combination of fresh fruits (update: add fresh peaches, as well) and varied textures make this beauty, a bowl made in summer heaven!
